Old fashioned glass.

Take your time and savour the taste: Pour 50ml for a single serving. Let it sit for 2 to 3 minutes, depending on its complexity, so the liquid can breathe. The greater its age, the more resting time it needs before consumption. Swirl it around gently, letting it flow, observing its colour and body. Take a sniff to detect the aromas. With the first sip, hold the liquid in your mouth for a few seconds to accustom your palate to the flavour until it begins to understand and single out the aromas little by little.

Level of complexity: Advanced craft

Details: In pursuit of creative excellence, this serve presents the product in its purest form—slightly chilled, either in the fridge or over a large-format ice cube. It is served in a bowl that evokes the essence of the barrel, accompanied by a spiced honey air.

INGREDIENTS

  • 50 ml Matusalem GR23
  • 10 ml Honey Air*
  • Garnish: Roasted apple with crystallized honey**

METHOD

  1. Serve the Matusalem GR23 in a bowl or coupette glass.
  2. Spoon the honey air on top.
  3. Finish with a 4 x 2 cm cube of roasted apple.

*HONEY AIR

  • 250 g Water
  • 250 g Honey
  • 8 g Sucro Ester
  1. Add all ingredients to a measuring jug or mixing glass and blend with an immersion blender.
  2. Use a bubble kit or air pump to generate the foam just before serving the cocktail, ensuring a stable and generous layer of air.

**ROASTED APPLE

  • 200 g Fuji apple
  • 8 g Crystallized honey
  1. Peel and cut the apple into 4 x 2 cm cubes.
  2. Let it settle in a test-tube-style decanter for 24 hours.
  3. Sprinkle with crystallized honey.

  4. Bake for 5 minutes at 180°C (356°F).

  5. Let cool to room temperature, then chill.

  6. Store in an airtight container for service.

Details: A subtle and delicate yet long-lasting union on the palate between our Matusalem GR23 and a sweet Sherry wine such as PX.

INGREDIENTS

  • 60 ml Matusalem GR23
  • 45 ml Pedro Ximenez
  • Garnish: Pecan nut and Pedro Ximénez reduction*

METHOD

  1. Measure and pour all ingredients into a mixing glass.
  2. Stir with ice using the stir technique.
  3. Strain into a rocks glass.
  4. Finish with the pecan and PX reduction.

*PX REDUCTION

  • 450 g Pedro Ximénez (PX)

  • 10 g Cane molasses

  1. Add all ingredients to a reduction-style saucepan and heat over medium.
  2. Stir with a whisk until the mixture becomes a smooth, semi-liquid paste.
  3. Reduce to one-third of the original volume.
  4. Let cool to room temperature and store in a squeeze bottle for service.

Details: This proposal pushes creativity even further, shifting the focus away from roasted and caramel notes to highlight the woody character imparted by American oak casks.

INGREDIENTS

  • 45 ml Matusalem GR15
  • 25 ml Semi-sweet Italian White Vermouth
  • 60 ml Roasted Pineapple Water*
  • Garnish: Sandalwood oil**

METHOD

  1. Measure and pour all ingredients into a mixing glass.
  2. Stir with ice using the stir technique.
  3. Strain into a coupette-style cocktail glass.
  4. Finish with 3 drops of sandalwood oil.

*ROASTED PINEAPPLE WATER

  • 500 g Fresh pineapple, peeled and chopped

  • 40 g Coconut sugar

  • 5 g Cinnamon sticks

  • 0.5 g Cardamom

  1. In a pan, add a small amount of oil and begin searing the pineapple.
  2. Once it starts to release its juice, add the remaining ingredients and cook for 10 minutes.
  3. After that, remove the pineapple, strain the juice, and blend it in a high-speed blender.
  4. Strain the result and centrifuge to clarify for 8 minutes at 4000 rpm.

**SANDALWOOD OIL

  • 70 g Olive oil
  • 0.2 g Sandalwood essential oil
  1. Mix all ingredients until fully combined and homogeneous.
  2. Transfer to a squeeze bottle for service.

Details: A Matusalem Insolito blend crafted to highlight the red fruit notes brought by the cask aging—enhancing plum and orange nuances, both signature aromas of the barrel world.

INGREDIENTS

  • 50 ml Matusalem Insolito
  • 15 ml Palo Cortado Sherry
  • 15 ml Orange SS1
  • 90 ml Clarified Plum Juice*
  • Garnish: Licorice butter rim** and salt

METHOD

  1. Brush the rim of the glass with licorice butter using a silicone brush.
  2. Measure and pour all ingredients into a mixing glass, then stir with ice.
  3. Strain into the prepared glass and add a clear prism ice cube.

*CLARIFIED PLUM JUICE

  • 1000 ml Strained plum juice

  • 15 g Pectinase

  1. Blend the pectinase into the plum juice.
  2. Let it settle in a test-tube-style decanter for 24 hours.
  3. Filter using filter paper.

If available, use a laboratory centrifuge at 4000 rpm for 8 minutes for optimal clarification.

**LICORICE BUTTER RIM

  • 200 g Melted butter
  • 6 g Licorice paste
  1. Melt the butter gently, without browning or frying.
  2. Mix with the licorice paste using a small whisk until fully combined and smooth.
  3. Transfer to a container and let it cool to room temperature.

  • 30 ml Coffee Liqueur
    90 ml Cold Brew Coffee
  • Garnish: Salted liquid caramel

METHOD

  1. Brush the side of the glass with liquid caramel and sprinkle with Maldon salt.
  2. Measure and pour the ingredients into the glass.
  3. Stir gently with a bar spoon.
  4. Finish with freshly grated orange zest using a microplane.

  • 300 g Simple syrup
  • 300 g Honey
  1. Combine in a bowl and mix using a whisk.

**CLARIFIED GRAPEFRUIT JUICE

  • 1000 ml Strained grapefruit juice
  • 4 g Pectinase
  1. Blend the pectinase into the grapefruit juice.
  2. Let it settle in a test-tube-style decanter for 24 hours.

MATUSALEM may from time to time provide access to our Services via mobile devices. Mobile versions may require that users log in with an Account. In such cases, information about use of mobile versions may be associated with Accounts. In addition, MATUSALEM may enable Individuals to download an application, widget, or other tool that can be used on mobile or other computing devices. Some of these tools may store information on mobile or other devices. These tools may transmit Personal Information to MATUSALEM to enable Individuals to access Accounts and to enable us to track use of these tools. This distinctive cocktail, created by Simone Rossi of Darkside Bar at Rosewood Hong Kong, was inspired by traditional Chinese sweet potato and ginger soup. It has a delightfully complex, slightly sour flavor profile.

INGREDIENTS

Ginger

Egg White

Combine the rum, ginger, and egg white in a cocktail shaker. Shake without ice for 30 seconds to integrate the egg white, and then add ice and shake again. Pour into a rocks glass, garnish with sweet potato candy, and enjoy.
